Hot Chicken Flatbread

Hot Louisiana flavoured fried chicken paired with sweet and tangy pickle slices, atop a crispy flatbread covered with cheese. Finished with a drizzle of sriracha lime mayo.

1 Flatbread, Pre-Grilled
3 Tbsp Custom Culinary® Hot Louisiana Flavour Glaze​
10 each Bread & Butter Pickle Slices
1/2 cup Mozzarella Cheese
1 Chicken Thigh, Deboned and Diced into 1" Pieces
1 Tbsp Crumbled Cotija (or Feta) Cheese
1/4 cup Custom Culinary® All Purpose Crispy Batter​
1/4 cup Custom Culinary® Seasoned Flour​
1/4 cup Mayo
1 tsp Custom Culinary® Sriracha Lime Seasoning, mixed into Mayo ​​

Preparation

  1. Prepare Custom Culinary® All Purpose Crispy Batter as per instructions.
  2. Toss thighs in Custom Culinary® Seasoned Flour. Dip into wet batter and allow excess to drain. Place back into Seasoned Flour and toss to coat. 
  3. Deep fry chicken pieces at 360°F (182°C) for approximately 15 minutes or until the internal temperature is least 165°F (74°C).
  4. Brush flatbreads with Custom Culinary® Hot Louisiana Flavour Glaze using a pastry brush. Top with cheeses (reserving some mozzarella) and pickles.
  5. Toss cooked chicken pieces in Flavour Glaze and place onto flatbread. Top with remainder mozzarella cheese.
  6. Cook flatbread in 425°F (218°C) oven until crispy, approximately 10 minutes.
  7. In small bowl, whisk mayo and Custom Culinary® Sriracha Lime Seasoning until fully combined. Fill squeeze bottle with seasoned mayo.
  8. Remove flatbread from the oven and drizzle with seasoned mayo.
  9. Slice and serve.
