This delightfully spicy, tangy shrimp appetizer combines crispy Custom Culinary^® Chef’s Own^™ Tempura Batter and fried shrimp, tossed with Custom Culinary^® Chef’s Own^™ Dynamite Seasoning.

Quantity	Ingredients
	For Dynamite Sauce:
100 gms	Mayonnaise
5 gms	Master’s Touch® American Ranch Dressing
10 gms	Tomato Ketchup
	For Tempura Batter:
100 gms	Chef’s Own™ Tempura Batter
180 gms	Chilled Water
	Marination:
500 gms	Shrimp
15 gms	Chef’s Own™ Hot Chili Marinade
10 gms	Chilled Water

Preparation

Marinating

Make slurry of the water and Hot Chilli Marinade.
In a bowl, add the Shrimp and the slurry together.
Marinate for 20 minutes in a chiller.

Tempura Batter

In a bowl, whisk in tempura batter and chilled water.
Drop the marinated shrimp into the mix.
Shake off excess flour from the wings and drop into the fryer.
Cook at 165c for 3-4 minutes.

Dynamite Sauce

In a bowl, mix the all the ingredients for the Dynamite Sauce.

Assembling

Toss the battered fried shrimp with 100 gms of prepared Dynamite Sauce.
