This delightfully spicy, tangy shrimp appetizer combines crispy Custom Culinary® Alfa Chef’s Own Tempura Batter and fried shrimp, tossed with Custom Culinary® Alfa Chef’s Own Dynamite Sauce.

Recipe Ingredients

Quantity Ingredients
  For Dynamite Sauce:
100 gms Mayonnaise
5 gms Chef’s Own® Dynamite Seasoning
10 gms Tomato Ketchup
  For Tempura Batter:
100 gms Chef’s Own® Tempura batter
180 gms Chilled Water
  Marination:
500 gms Shrimp
15 gms Chef’s Own® Hot Chili Marinade
10 gms Chilled Water

Preparation

Marinating
  1. Make slurry of the water and Hot Chilli Marinade.
  2. In a bowl, add the Shrimp and the slurry together.
  3. Marinate for 20 minutes in a chiller.
Tempura Batter
  1. In a bowl, whisk in tempura batter and chilled water.
  2. Drop the marinated shrimp into the mix.
  3. Shake off excess flour from the wings and drop into the fryer.
  4. Cook at 165c for 3-4 minutes.
Dynamite Sauce
  1. In a bowl, mix the all the ingredients for the Dynamite Sauce.
Assembling
  1. Toss the battered fried shrimp with 100 gms of prepared Dynamite Sauce.
