Preparation
1. Mix 100ml of water with 10g of Custom Culinary® Gold Label Roast Chicken Fond. Use this fond to mix in 100g of oil of your liking and 30g of flour.
2. Pan fry the coral mixture by high heat until the water is resolved.
3. While taking the chip out of the pan, roll it carefully around a round object.
4. Wash, peel & cut all vegetables into Julienne. Pan fry the vegetables julienne in rape seed oil & deglaze with Custom Culinary® Gold Label Roast Chicken Fond. Reduce by half. Season to taste with salt, pepper, zugar and fresh coriander. You have all you need to plate the cannelloni. Enjoy!
